Method

  1. 1Pressure-cook moong dal with turmeric until soft, then lightly mash.
  2. 2Boil the shredded cabbage with salt until just tender.
  3. 3Grind coconut, green chilli and cumin into a coarse paste.
  4. 4Combine the cooked dal, cabbage and ground paste in a pan.
  5. 5Add a little water and simmer for 5 minutes to blend the flavours.
  6. 6Heat coconut oil and crackle mustard seeds, urad dal and curry leaves.
  7. 7Pour the tempering over the kootu and stir through.
  8. 8Adjust salt and serve warm with rice.
