Method

  1. 1Dry-roast the moong dal on low heat until golden and fragrant, then rinse it.
  2. 2Rinse the rice separately and keep both aside.
  3. 3Heat oil in a pressure cooker and crackle the cumin seeds, bay leaf and dried red chilli.
  4. 4Add the turmeric powder, cumin powder and slit green chilli.
  5. 5Stir in the cauliflower florets, green beans and peas, sautéing for three minutes.
  6. 6Add the roasted dal and rice, tossing to coat in the spices.
  7. 7Pour in the water with salt and sugar, and stir well.
  8. 8Close the lid and pressure-cook for four whistles, then release naturally.
  9. 9Open, adjust consistency with hot water and mix in the garam masala.
  10. 10Finish with a drizzle of hot oil and serve piping hot.
