Method

  1. 1Rinse basmati rice and soak for 20 minutes. Drain and set aside.
  2. 2In a heavy-bottomed pot, heat 20 ml oil over medium flame. Add mustard seeds and let them splutter.
  3. 3Add chopped onions, green chilies, and curry leaves. Sauté until onions turn golden.
  4. 4Stir in chopped tomatoes and cook until soft and pulpy.
  5. 5Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook for 1 minute.
  6. 6Add soaked rice, 400 ml water, and salt to taste. Bring to a boil.
  7. 7Add soaked and drained toor dal, chopped carrots, green beans, and peas. Stir well.
  8. 8Cover and simmer on low heat for 15–18 minutes, stirring occasionally, until rice and dal are tender and the mixture thickens.
  9. 9Turn off heat. Let it rest for 5 minutes. Fluff gently with a fork before serving.
