  1. 1In a large bowl, add 400 ml of fresh curd (dahi) and 400 ml of water. Mix well with a whisk or spoon until smooth.
  2. 2Add 10 g of roasted cumin powder (jeera powder) and mix thoroughly to combine.
  3. 3Add 10 g of roasted coriander powder (dhania powder) and stir well.
  4. 4Add 10 g of salt (or to taste) and mix until fully dissolved.
  5. 5Pour the mixture into a saucepan and place it on medium heat.
  6. 6Heat the buttermilk gently, stirring continuously, for 5–7 minutes until it just begins to simmer and the aroma of spices becomes fragrant.

  8. 8Strain the chaas through a fine mesh sieve into a serving pitcher or jug to remove any lumps.
