  1. 1In a medium pot, add 1.5 litres of water and bring to a gentle boil over medium heat.
  2. 2Add 400 g of boneless chicken thighs, cut into 2 cm pieces, and simmer for 5 minutes to remove impurities.
  3. 3Skim off any foam that rises to the surface and discard.
  4. 4Add 1 large onion, thinly sliced, 2 medium tomatoes, chopped, 2 cloves garlic, crushed, and 1 small piece of ginger (2 cm), sliced.
  5. 5Stir in 1 tsp cumin seeds, 1 tsp ground coriander, 1/2 tsp turmeric powder, and 1/2 tsp red chilli powder.
  6. 6Simmer for 10 minutes on medium-low heat until the chicken is fully cooked and tender.
  7. 7Add 1 medium potato, peeled and diced, and cook for another 5 minutes.
  8. 8Season with salt to taste and garnish with fresh coriander leaves before serving.
