Method

  1. 1Boil 4 eggs for 9 minutes, cool in cold water and peel.
  2. 2Halve or quarter the eggs and lightly pan-fry the cut sides until golden. Set aside.
  3. 3Heat oil and fry chopped garlic, ginger and slit green chillies for 30 seconds.
  4. 4Add sliced onion and capsicum; stir-fry on high heat until edges char.
  5. 5Pour in soy sauce, vinegar, red chilli sauce and a pinch of sugar.
  6. 6Slurry the cornflour with 60 ml water and stir in to thicken the sauce.
  7. 7Return the eggs, toss gently to coat and cook one minute.
  8. 8Finish with spring onion greens and serve hot.
