Method

  1. 1Wipe the mushrooms clean and halve or quarter them depending on size.
  2. 2Toss the mushrooms in cornflour, plain flour, a little soy sauce and salt.
  3. 3Shallow-fry them in hot oil until golden at the edges, then drain.
  4. 4In a wok, heat a little oil and stir-fry the garlic, ginger and green chilli.
  5. 5Add the onion and capsicum cubes, stir-frying on high for two minutes.
  6. 6Stir in the soy sauce, chilli sauce and vinegar.
  7. 7Add a splash of water and the cornflour slurry, stirring to a glossy sauce.
  8. 8Toss the fried mushrooms back in to coat.
  9. 9Finish with spring onion greens and serve hot.
