Method

  1. 1Soak the soya chunks in hot water for ten minutes until soft, then squeeze out the water.
  2. 2Toss the squeezed chunks with cornflour, a little soy sauce and salt to coat.
  3. 3Shallow-fry the chunks in hot oil until golden and crisp, then drain.
  4. 4In a wok, heat a little oil and stir-fry the garlic, ginger and green chilli.
  5. 5Add the onion and capsicum, stir-frying on high heat for two minutes.
  6. 6Stir in the soy sauce, chilli sauce, vinegar and a little sugar.
  7. 7Add a splash of water and the cornflour slurry, stirring until the sauce glazes.
  8. 8Toss in the fried soya chunks to coat them in the sauce.
  9. 9Finish with spring onion greens and serve hot.
