Method

  1. 1Spread the cooked rice on a plate to cool so the grains stay separate.
  2. 2Heat the oil and fry the peanuts until crisp, then set some aside.
  3. 3Add the mustard seeds, urad dal and chana dal and let them turn golden.
  4. 4Toss in the dried red chilli, slit green chilli and curry leaves.
  5. 5Sprinkle in the turmeric and switch off the heat so it does not burn.
  6. 6Squeeze in the lemon juice and add the salt to the warm tempering.
  7. 7Add the cooled rice and fold gently so every grain is coated yellow.
  8. 8Return the reserved peanuts and mix through.
  9. 9Rest for five minutes so the flavours settle.
  10. 10Garnish with chopped coriander and serve at room temperature.
