Method

  1. 1Soak the urad dal for 4 hours, drain and grind to a fluffy batter.
  2. 2Whisk the batter well with salt until airy and light.
  3. 3Deep-fry small dollops until golden, then drain.
  4. 4Soak the fried bhallas in warm salted water for 15 minutes.
  5. 5Gently squeeze out excess water from each bhalla.
  6. 6Whisk the yogurt smooth with a little sugar and salt.
  7. 7Arrange bhallas, pour over yogurt and drizzle tamarind chutney.
  8. 8Dust with roasted cumin and chilli powder and serve chilled.
