Method

  1. 1Slice the brinjal into thick rounds and rub with turmeric and salt.
  2. 2Shallow-fry the slices until golden on both sides, then set aside.
  3. 3Whisk the yogurt smooth with sugar, chilli powder and a little water.
  4. 4Heat oil in a pan and crackle cumin seeds and dried red chilli.
  5. 5Lower the heat and stir in the whisked yogurt, cooking gently until it thickens.
  6. 6Season with salt and roasted cumin powder.
  7. 7Slide in the fried brinjal and coat with the sauce.
  8. 8Simmer for 3 minutes, then serve warm with rice.
