Method

  1. 1Boil 4 eggs for 9 minutes, peel and prick lightly with a fork.
  2. 2Fry the eggs in a little oil until golden, then set aside.
  3. 3In the same oil, saute half the onions (cut in chunks) until soft, remove and reserve.
  4. 4Add the remaining finely chopped onion and cook to a deep brown.
  5. 5Stir in ginger-garlic paste and cook until raw smell fades.
  6. 6Add pureed tomato, turmeric, red chilli, coriander powder and salt; cook till oil separates.
  7. 7Pour in a splash of water and simmer to a thick masala.
  8. 8Return the eggs and the reserved onion chunks, simmer 5 minutes.
  9. 9Finish with garam masala and fresh coriander.
