Method

  1. 1Rinse basmati rice under cold water until the water runs clear, then soak for 20 minutes. Drain well.
  2. 2Heat 2 tablespoons of oil in a large non-stick pan over medium-high heat.
  3. 3Add 2 eggs, lightly beaten, and scramble them quickly until just set. Remove and set aside.
  4. 4In the same pan, add 1 tablespoon of oil if needed, then toss in 1 chopped green chili and 2 cloves of minced garlic. Sauté for 30 seconds until fragrant.
  5. 5Add the drained rice and stir-fry for 2 minutes, breaking up any clumps with a spatula.
  6. 6Season with 1 teaspoon soy sauce, 1 teaspoon hoisin sauce, and 1/2 teaspoon salt. Mix well to coat the rice.
  7. 7Return the scrambled eggs to the pan and fold gently into the rice. Cook for another 2 minutes to heat through.
  8. 8Stir in 1 tablespoon of chopped spring onion and 1/2 teaspoon of white pepper. Adjust seasoning if needed.
  9. 9Remove from heat, cover, and let rest for 2 minutes before serving.
