Method

  1. 1Boil and peel the eggs, then prick and toss with turmeric, red chilli and salt.
  2. 2Shallow-fry the eggs in mustard oil until the skin blisters, then set aside.
  3. 3In the same oil fry sliced onion low and slow until deep brown.
  4. 4Add ginger-garlic paste, then tomato and cook till the oil separates.
  5. 5Stir in turmeric, red chilli, cumin and coriander powder with a splash of water and bhuno well.
  6. 6Return the eggs, add sugar and salt and coat in the thick masala.
  7. 7Sprinkle garam masala, cover and cook five minutes, then serve.
