Method

  1. 1Boil 4 eggs for 9 minutes, peel and halve.
  2. 2Whisk the gram flour with turmeric, red chilli, ajwain, baking soda and salt.
  3. 3Add water gradually to make a thick, smooth coating batter.
  4. 4Stir in chopped green chilli and a little chopped coriander.
  5. 5Heat oil in a kadhai to medium-hot.
  6. 6Dip each egg half fully in the batter to coat.
  7. 7Slide into the hot oil and fry, turning, until golden and crisp.
  8. 8Drain on paper and sprinkle with chaat masala.
  9. 9Serve hot with green chutney.
