Method

  1. 1Boil and peel the eggs, then prick and shallow-fry with turmeric until golden.
  2. 2Heat oil and crackle mustard, cumin, fenugreek and curry leaves.
  3. 3Saute sliced onion until soft, then add ginger-garlic paste and green chilli.
  4. 4Add tomato, red chilli, coriander powder and turmeric and cook down.
  5. 5Pour in tamarind extract with water and a little jaggery and boil the raw taste off.
  6. 6Add the fried eggs and simmer until the pulusu thickens slightly.
  7. 7Adjust salt and serve hot with steamed rice.
