Method

  1. 1In a small bowl, beat 4 large eggs with a pinch of salt and 10 ml water until smooth.
  2. 2Heat 15 ml of oil in a non-stick pan over medium heat.
  3. 3Pour in the beaten eggs and let them cook gently, stirring continuously with a spatula to form soft curds.
  4. 4Add 1/2 tsp cumin seeds, 1/4 tsp turmeric powder, and 1/4 tsp red chili powder. Stir well to combine.
  5. 5Cook for 2–3 minutes until the eggs are just set but still moist. Remove from heat and set aside.

  9. 9Top with a slice of tomato, a few leaves of fresh coriander, and a pinch of chaat masala if desired.
