Method

  1. 1Cut 250 g of fresh white fish (like kingfish or pomfret) into 2 cm bite-sized pieces. Pat dry with a clean cloth.
  2. 2In a bowl, mix fish pieces with 1 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp cumin powder, 1 tsp ginger-garlic paste, and 1 tbsp lemon juice. Marinate for 15 minutes.
  3. 3In a separate bowl, whisk 2 tbsp rice flour and 1 tbsp cornstarch with 60 ml water to make a smooth, thin batter.
  4. 4Heat 100 ml of oil in a deep pan over medium heat. Once hot, dip each fish piece into the batter, ensuring full coating.
  5. 5Carefully lower battered fish into the hot oil. Fry in batches for 3–4 minutes, turning once, until golden and crisp.
  6. 6Remove fish with a slotted spoon and drain on paper towels. Keep warm while frying the rest.
  7. 7In a small bowl, mix 1 tbsp lemon juice, 1 tsp chopped coriander, and a pinch of chaat masala for dipping.
  8. 8Serve hot with the tangy chutney on the side. Best enjoyed fresh and crunchy.
