Method

  1. 1Whisk the whole-wheat flour and rice flour together with the water into a thin, lump-free batter.
  2. 2The batter should be runny like buttermilk so the dosas turn out lacy.
  3. 3Stir in the cumin, crushed pepper, chopped green chilli, curry leaves and coriander.
  4. 4Season with salt and rest the batter for ten minutes.
  5. 5Heat a tawa on medium-high until hot, then lower to medium.
  6. 6Stir the batter and pour it from the outer edge working inward in a thin swirl.
  7. 7Fill any large gaps with a little extra batter.
  8. 8Drizzle oil around the edges.
  9. 9Cook until the underside is golden and the edges lift and crisp.
  10. 10Flip briefly to set the top, then fold and remove.
  11. 11Serve hot with coconut chutney or ginger-free peanut chutney.
