Method

  1. 1Crack 4 large eggs into a bowl and beat them lightly with a pinch of salt and a dash of water to make them fluffy.
  2. 2Heat 2 tbsp of oil in a non-stick pan over medium heat.
  3. 3Pour the beaten eggs into the pan and let them cook undisturbed for 10 seconds.
  4. 4Gently stir the eggs with a spatula, lifting the cooked edges and letting the uncooked part flow underneath.
  5. 5Cook until the eggs are just set but still soft and slightly moist — do not overcook.
  6. 6Remove the half-fried eggs from the pan and set aside.
  7. 7In the same pan, toast 4 slices of bread on both sides over medium heat until golden and crisp.
  8. 8Place the toasted bread on serving plates and top each with a generous spoonful of the half-fried eggs.
  9. 9Sprinkle with a pinch of red chili powder and a few drops of lemon juice for brightness.
  10. 10Serve hot with a side of sliced tomato or a small bowl of chutney if desired.
