  1. 1Peel and cube the green bananas, keeping them in water until needed.
  2. 2Heat mustard oil; add the bay leaf and panch phoron and let it splutter.
  3. 3Add green chilli, turmeric and cumin powder, and stir briefly.
  4. 4Add the drained banana and salt, tossing to coat.
  5. 5Add grated coconut and a little water, cover and simmer 12-14 minutes until tender.
  6. 6Finish with sugar, cook 2 minutes and serve with rice.
