Method

  1. 1Slit the fish and marinate with chilli, turmeric, pepper, lime and salt.
  2. 2Rest the fish for 20 minutes.
  3. 3Shallow-fry the fish lightly in coconut oil, then set aside.
  4. 4In the same oil splutter mustard seeds and curry leaves.
  5. 5Add sliced shallots, ginger and garlic and saute.
  6. 6Add chopped tomato and green chilli, cook till pulpy.
  7. 7Stir in chilli powder, turmeric and pepper to make a thick masala.
  8. 8Add a spoon of ghee and cook the masala till glossy.
  9. 9Soften banana leaves over a flame till pliable.
  10. 10Lay masala on the leaf, place the fish and cover with more masala.
  11. 11Wrap into a parcel and roast on a tawa 5 minutes each side.
  12. 12Rest, then open the leaf and serve hot with rice.
