Method

  1. 1Pressure-cook 80 g moong dal with turmeric until soft and mash lightly.
  2. 2Boil diced bottle gourd with a little water until just tender.
  3. 3Grind grated coconut, cumin and green chilli into a smooth paste.
  4. 4Add the cooked dal and coconut paste to the vegetable with salt.
  5. 5Simmer 5 minutes until it thickens into a creamy stew.
  6. 6Heat oil and crackle mustard seeds, urad dal and curry leaves.
  7. 7Pour the tempering over the kootu and serve hot with rice.
