Method

  1. 1Coarsely blend 150 g green peas with green chilli.
  2. 2Temper cumin, fennel and asafoetida in oil, add the pea paste and cook until dry.
  3. 3Season the filling with sugar and salt, then cool completely.
  4. 4Knead 200 g flour with salt and oil into a soft dough and rest 15 minutes.
  5. 5Pinch balls, flatten, spoon in the pea filling and seal well.
  6. 6Roll each gently into a small thick disc.
  7. 7Deep-fry in hot oil, spooning oil over so it puffs, until pale golden.
  8. 8Drain and serve hot with aloo dum.
