Method

  1. 1Grate the bottle gourd, salt it and squeeze out all the water.
  2. 2Mix the gourd with gram flour, chilli and a little salt into a stiff dough.
  3. 3Shape into small balls and deep-fry until golden; drain and set aside.
  4. 4Blend tomato with soaked cashews to a smooth puree.
  5. 5Heat oil, add cumin and asafoetida, then pour in the puree.
  6. 6Add turmeric, coriander and chilli powder; cook until the oil separates.
  7. 7Stir in cream and enough water for a pourable gravy, then simmer 5 minutes.
  8. 8Add garam masala, drop in the koftas just before serving so they stay soft.
  9. 9Garnish with coriander and serve hot.
