Method

  1. 1Knead the whole-wheat flour with oil, salt and water into a firm dough and rest it.
  2. 2For the filling, mix the roasted gram flour with mustard oil, minced garlic, ginger and green chilli.
  3. 3Stir in the ajwain, nigella, pickle masala, lemon juice, coriander and salt, sprinkling water to just bind.
  4. 4Divide the dough into balls, flatten each, add a spoon of filling and seal into a smooth ball.
  5. 5Roast the stuffed littis in a hot oven, turning, until cracked and deeply browned, about twenty-five minutes.
  6. 6Meanwhile, char the brinjal, potato and tomato over a flame or under the grill until blistered and soft.
  7. 7Peel the charred vegetables and mash them together in a bowl.
  8. 8Mix in the chopped onion, garlic, green chilli, mustard oil, coriander and salt to make the chokha.
  9. 9Brush or dip the hot littis in oil so they glisten.
  10. 10Break the littis open and serve alongside the smoky chokha.
