Method

  1. 1Crack 4 eggs into a mixing bowl. Add 1/4 tsp salt and 1/4 tsp turmeric powder. Beat well with a fork until the mixture is smooth and slightly frothy.
  2. 2In a small bowl, mix 1 tbsp chopped onion, 1 tbsp chopped green chilli, 1 tbsp chopped coriander leaves, and 1/2 tsp cumin seeds.
  3. 3Heat 1 tbsp oil in a non-stick pan over medium heat. Add the cumin seeds and let them sizzle for 10 seconds until fragrant.
  4. 4Add the chopped onion and green chilli. Sauté for 2 minutes until onions turn translucent.
  5. 5Pour in the beaten egg mixture. Let it cook undisturbed for 30 seconds to set the base.
  6. 6Gently lift the edges with a spatula and tilt the pan to let uncooked egg flow underneath. Repeat until the omelette is mostly set.
  7. 7Sprinkle the chopped coriander leaves and a pinch of red chilli powder over the top. Cover the pan with a lid and cook for 1 minute to steam and set the top.
  8. 8Slide the omelette onto a plate. Repeat the process with the remaining oil and egg mixture for the second omelette.
  9. 9Serve hot with a side of tomato chutney or green chutney, if desired.
