Method

  1. 1Soak chana dal for 2 hours, then drain thoroughly.
  2. 2Reserve a spoonful of dal and coarsely grind the rest without water.
  3. 3Mix in the whole dal, chopped onion, green chilli, ginger and curry leaves.
  4. 4Add fennel seeds, chopped coriander and salt; combine into a stiff dough.
  5. 5Shape small portions into flat discs on your palm.
  6. 6Heat oil for deep-frying to medium-high.
  7. 7Slide in the vadas in batches and fry until golden and crisp.
  8. 8Drain on paper and serve hot with coconut chutney.
