Method

  1. 1Clean and finely chop the banana flower, then boil in salted turmeric water until soft.
  2. 2Drain well and squeeze out excess moisture.
  3. 3Heat oil and fry the potato cubes until lightly golden; remove.
  4. 4Temper cumin, bay leaf and dried red chilli in the same oil.
  5. 5Add grated ginger and the chopped banana flower with turmeric and chilli powder.
  6. 6Return the potatoes, add salt and cook covered on low for 12 minutes.
  7. 7Stir in grated coconut and roasted cumin powder.
  8. 8Cook uncovered until dry, finishing with a pinch of sugar and garam masala.
  9. 9Serve warm with rice or luchi.
