Method

  1. 1Mix rice flour with roasted urad dal flour, sesame and cumin seeds.
  2. 2Add asafoetida, chilli powder and salt.
  3. 3Rub in hot oil until the mixture resembles crumbs.
  4. 4Add water gradually and knead into a smooth, pipeable dough.
  5. 5Load the dough into a murukku press fitted with a star plate.
  6. 6Press spirals directly onto a greased ladle or sheet.
  7. 7Heat oil and slide the spirals in, frying on medium until the sizzling stops.
  8. 8Drain on paper, cool fully and store airtight.
