Method

  1. 1Clean and halve the mushrooms, then pat them dry.
  2. 2Coat them in a batter of cornflour, plain flour, soy sauce and salt.
  3. 3Deep-fry or shallow-fry until golden and crisp; drain on paper.
  4. 4In a wok, heat the oil and stir-fry the garlic, ginger and green chilli.
  5. 5Add the finely chopped onion and capsicum, cooking for two minutes.
  6. 6Stir in the soy sauce, chilli sauce, tomato ketchup and vinegar.
  7. 7Pour in the water and bring to a gentle simmer.
  8. 8Add the cornflour slurry and stir until the gravy thickens and glazes.
  9. 9Toss in the fried mushrooms to coat them well.
  10. 10Scatter over spring onion greens and serve hot.
