Method

  1. 1Wash and finely chop the fenugreek leaves.
  2. 2Combine wheat flour, gram flour, fenugreek, turmeric, chilli and salt.
  3. 3Add a little oil and water to knead a firm, non-sticky dough.
  4. 4Shape into thick logs and steam for 20 minutes until set.
  5. 5Cool the logs, then slice into thick rounds.
  6. 6Heat oil, crackle mustard and sesame seeds and add curry leaves.
  7. 7Toss the slices in the tempering until lightly browned and serve.
