Method

  1. 1Boil and peel the eggs, then prick and toss with turmeric and salt.
  2. 2Shallow-fry the eggs in coconut oil until golden and set aside.
  3. 3In the same oil fry lots of sliced onion very slowly until deep brown.
  4. 4Add ginger-garlic paste, green chilli and curry leaves and fry a minute.
  5. 5Stir in red chilli, coriander, fennel and garam masala with a splash of water and roast the masala dark.
  6. 6Return the eggs and coat thoroughly in the dry masala.
  7. 7Finish with pepper and fresh curry leaves and serve with parotta.
