Method

  1. 1Boil and peel the eggs, then prick and shallow-fry with turmeric until lightly golden.
  2. 2Heat sesame oil and crackle mustard seeds, fenugreek and curry leaves.
  3. 3Saute chopped onion, then add ginger-garlic paste and tomato until pulpy.
  4. 4Stir in sambar powder, red chilli, coriander powder and turmeric.
  5. 5Pour in the tamarind extract with water and simmer till the raw smell goes.
  6. 6Slip in the fried eggs and cook till the gravy thickens.
  7. 7Season with salt and serve hot with steamed rice.
