Method

  1. 1Heat 2 tbsp of oil in a heavy-bottomed pot over medium heat.
  2. 2Add 1 finely chopped onion and sauté until golden brown, about 6 minutes.
  3. 3Add 1 tsp ginger paste and 1 tsp garlic paste, and cook for 1 minute until fragrant.
  4. 4Add 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp turmeric, 1 tsp red chili powder, and 1/2 tsp garam masala. Stir well to combine.
  5. 5Add 400 g of mutton (bone-in, cut into 2-3 cm pieces) and sear on all sides until browned, about 5 minutes.
  6. 6Pour in 200 ml of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  7. 7Add 1 medium tomato, chopped, and 1 green chili, slit. Cook for another 5 minutes until the mutton is tender and the gravy thickens.
  8. 8Season with salt to taste and adjust spice level if needed. Garnish with fresh coriander leaves before serving.
  9. 9Serve hot with steamed rice or naan.
