Method

  1. 1Heat 20 ml ghee in a heavy-bottomed pot over medium heat.
  2. 2Add 1 finely sliced onion and sauté until golden brown, about 8 minutes.
  3. 3Stir in 1 tsp ginger-garlic paste and cook for 1 minute until fragrant.
  4. 4Add 200 g mutton pieces, season with 1 tsp salt, and brown lightly on all sides.
  5. 5Mix 2 tbsp cashew paste with 50 ml warm water and stir into the pot.
  6. 6Add 100 ml plain yogurt, 1 tsp garam masala, 1/2 tsp ground cumin, and 1/4 tsp turmeric. Stir well.
  7. 7Pour in 300 ml water, bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  8. 8Garnish with fresh coriander and serve hot with steamed rice or naan.
