Method

  1. 1Boil and peel the eggs and set aside.
  2. 2Heat coconut oil and splutter mustard seeds, curry leaves and dried red chilli.
  3. 3Saute sliced shallots and green chilli until soft, then add ginger-garlic paste.
  4. 4Add tomato with turmeric, red chilli, coriander powder and garam masala and cook to a thick masala.
  5. 5Pour in thin coconut milk and simmer a few minutes.
  6. 6Slide in the eggs, then stir in thick coconut milk and warm through without boiling.
  7. 7Season with salt and serve with appam or rice.
