Method

  1. 1Cook the rice until soft, then rinse it under cool water to remove excess starch.
  2. 2Transfer the rice to a bowl and pour in the water to cover it well.
  3. 3Add a little salt, stir, and let it rest at room temperature for a couple of hours to sour gently.
  4. 4Heat the oil in a small pan for the tempering.
  5. 5Splutter the mustard seeds and cumin seeds.
  6. 6Add the curry leaves, slit green chillies and asafoetida, frying for a few seconds.
  7. 7Pour the sizzling tempering over the soaked rice.
  8. 8Stir in the roasted cumin powder and adjust the salt.
  9. 9Serve cool, topped with fresh coriander.
