  1. 1Blanch 100 g spinach briefly, then blend to a smooth puree.
  2. 2Mix the puree into 200 g whole-wheat flour with carom seeds, salt and a little oil.
  3. 3Knead into a soft dough, adding water only if needed, and rest 10 minutes.
  4. 4Divide into balls and roll each into a thin round with dry flour.
  5. 5Cook on a hot griddle until bubbles rise on the surface.
  6. 6Flip, brush with oil and press gently until both sides are golden-spotted.
  7. 7Stack under a cloth and serve warm with curd or pickle.
