  1. 1Heat 2 tbsp ghee in a deep pan over medium heat. Add 1 tsp cumin seeds and let them sizzle for 10 seconds.
  2. 2Add 1 finely chopped onion and sauté until golden brown, about 6–7 minutes.
  3. 3Add 1 tbsp ginger-garlic paste and fry for 1 minute until raw smell disappears.
  4. 4Add 1 cup tomato puree and cook for 5–6 minutes until oil begins to separate from the mixture.
  5. 5Stir in 1 tsp garam masala, 1/2 tsp turmeric, 1/2 tsp red chili powder, and 1/2 tsp coriander powder. Mix well.
  6. 6Add 200 g paneer, cut into 2 cm cubes, and gently fold in. Cook for 2 minutes to coat the paneer with the masala.
  7. 7Pour in 150 ml warm water and stir. Simmer for 5 minutes on low heat to let flavors meld.
  8. 8Stir in 2 tbsp butter and 2 tbsp heavy cream. Cook for 1–2 minutes until the sauce thickens and becomes rich and glossy.
