Method

  1. 1Cube one onion and separate into petals; finely chop the rest.
  2. 2Sear the paneer cubes in a little oil until golden, then set aside.
  3. 3In the same pan, fry the onion petals until edged brown; remove and reserve.
  4. 4Saute the chopped onion until deep golden, then add ginger-garlic paste.
  5. 5Add tomato puree, turmeric, chilli and coriander powder; cook until oil separates.
  6. 6Pour in a little water and simmer into a thick gravy.
  7. 7Return the paneer and onion petals, folding gently.
  8. 8Add capsicum and cook 3-4 minutes so it stays crunchy.
  9. 9Sprinkle garam masala and crushed kasuri methi.
  10. 10Finish with coriander and serve hot.
