Method

  1. 1Cut paneer, onion and mixed peppers into matching thin strips.
  2. 2Heat oil and lightly sear the paneer strips until golden; set aside.
  3. 3In the same pan, add cumin seeds, then the onion strips and saute briefly.
  4. 4Add ginger-garlic paste and cook for a minute.
  5. 5Toss in the peppers and stir-fry on high heat to keep them crunchy.
  6. 6Add chopped tomato, turmeric, chilli and coriander powder.
  7. 7Stir in a spoon of tomato ketchup and a splash of vinegar for tang.
  8. 8Return the paneer and toss to coat everything in the masala.
  9. 9Sprinkle garam masala, adjust salt and serve hot.
