Method

  1. 1Slice paneer into thin squares and pair them up.
  2. 2Mix crumbled paneer, chopped nuts, raisins and a pinch of garam masala for the filling.
  3. 3Sandwich the filling between paneer pairs and press gently.
  4. 4Dust the sandwiches lightly and shallow fry until golden; set aside.
  5. 5Boil onion, cashews and tomato until soft, then blend smooth.
  6. 6Heat oil, add the puree with ginger-garlic paste and cook until thick.
  7. 7Add turmeric, chilli and coriander powder; fry until oil separates.
  8. 8Stir in cream and 100 ml water to make a silky gravy.
  9. 9Slide in the paneer sandwiches and simmer gently for 4 minutes.
  10. 10Finish with kasuri methi and garam masala, then serve hot.
