Method

  1. 1Bring 250 ml water with salt and a little oil to a rolling boil.
  2. 2Lower the heat, add 150 g roasted rice flour and stir fast into a lumpless dough.
  3. 3Cover and rest 5 minutes, then knead the warm dough until smooth.
  4. 4Divide into balls and roll each thin using rice flour to dust.
  5. 5Cut into neat circles with a lid or cutter.
  6. 6Cook on a hot griddle until pale spots appear, then flip.
  7. 7Press gently with a cloth so the pathiri puffs, then serve warm.
