Method

  1. 1Wash and dry the colocasia leaves, trimming thick stems.
  2. 2Mix gram flour with tamarind pulp, jaggery, green chilli and salt.
  3. 3Add water to make a thick spreadable paste.
  4. 4Lay a leaf vein-side up and spread a thin even layer of paste.
  5. 5Stack two more leaves, spreading paste between each.
  6. 6Fold in the sides, roll tightly and steam for 20 minutes.
  7. 7Cool, slice into rounds, then shallow-fry until crisp.
  8. 8Temper mustard and sesame in oil, pour over and serve.
