Method

  1. 1Heat 20 ml oil in a large wok or deep pan over high heat.
  2. 2Add 2 cloves garlic, minced, and 1 tsp ginger paste; stir-fry for 30 seconds until fragrant.
  3. 3Add 200 g peeled and deveined prawns; cook 2 minutes until pink and opaque. Remove and set aside.
  4. 4In the same pan, add 200 g cold, day-old basmati rice. Stir-fry 3 minutes until grains separate and lightly golden.
  5. 5Pour in 2 tbsp soy sauce, 1 tsp oyster sauce, and 1/2 tsp chilli sauce. Mix well to coat rice.
  6. 6Return prawns to the pan. Add 1/2 tsp salt and 1/4 tsp black pepper. Toss to combine.
  7. 7Stir in 1 tbsp chopped spring onion and 1 tsp sesame oil. Cook 1 minute more.
  8. 8Serve hot, garnished with extra spring onion and lime wedge if desired.
