Method

  1. 1Whisk 150 g semolina into a smooth pourable batter with 300 ml water and salt.
  2. 2Rest the batter 10 minutes so the semolina swells.
  3. 3Stir in chopped tomato, green chilli, coriander and cumin.
  4. 4Heat a flat pan and lightly oil it.
  5. 5Pour a ladle of batter and spread thin in a circle.
  6. 6Drizzle a little oil around the edge and cook until the base is golden.
  7. 7Flip and cook the other side until set and lightly crisp.
  8. 8Serve hot off the pan with chutney.
