Method

  1. 1Heat 20 ml oil in a heavy-bottomed pot over medium heat. Add 1 crushed garlic clove and 1 small cinnamon stick, sauté for 30 seconds until fragrant.
  2. 2Add 200 g lamb shoulder, cut into 2 cm cubes, and brown on all sides. Remove and set aside.
  3. 3In the same pot, add 1 tsp ground Kashmiri red chilli, 1 tsp ground coriander, 1/2 tsp ground cumin, and 1/4 tsp turmeric. Stir for 20 seconds to bloom the spices.
  4. 4Return the lamb to the pot. Add 150 ml warm water and 1 tbsp tomato paste. Stir well to coat the meat.
  5. 5Bring to a gentle simmer, then cover and cook on low heat for 15 minutes, stirring occasionally.
  6. 6Add 100 ml full-fat coconut milk (dairy-free) and 1 dried Kashmiri chilli (broken). Simmer uncovered for 5 minutes to thicken the sauce.
  7. 7Stir in 1 tbsp fresh coriander leaves and 1/2 tsp garam masala. Adjust salt to taste.
  8. 8Serve hot with steamed basmati rice or naan, garnished with extra coriander.
