Method

  1. 1Rinse the barnyard millet a few times and soak it for ten minutes, then drain.
  2. 2Dry-roast the peanuts until crunchy, then coarsely crush half of them.
  3. 3Heat the oil in a pressure cooker over medium heat.
  4. 4Crackle the cumin seeds, then add the chopped green chilli.
  5. 5Add the drained millet and the whole and crushed peanuts, tossing for a minute.
  6. 6Pour in the water and add rock salt to taste.
  7. 7Close the lid and pressure-cook for two whistles, then let the pressure release naturally.
  8. 8Open, stir gently and adjust the consistency with a little hot water if needed.
  9. 9Finish with lemon juice and fresh coriander before serving.
