Method

  1. 1Boil the noodles in salted water until just tender, then drain and rinse under cold water.
  2. 2Toss the drained noodles with a few drops of oil to keep them from sticking.
  3. 3Heat the oil in a wok over high heat until shimmering.
  4. 4Add the chopped garlic and ginger and stir-fry for a few seconds.
  5. 5Toss in the onion, carrot, capsicum and cabbage, stir-frying on high for two minutes.
  6. 6Add the schezwan sauce and soy sauce, tossing to coat the vegetables.
  7. 7Add the noodles and stir-fry vigorously to combine.
  8. 8Season with vinegar, salt and white pepper.
  9. 9Toss in the spring onion greens and serve immediately.
